Protein Cookies

These tasty little nuggets are as close to a healthy cookie as you can get. They have virtually no added fat, they are loaded with oatmeal, and they have protein for an added nutritional kick. Even better, spices such as cinnamon, cumin, cayenne, and ginger can help raise your metabolism. Need I say more?

I’ve adapted this recipe from the Spicy Oatmeal Raisin Cookie recipe in How it All Vegan. If you are looking for other great cookie recipes, I’d highly recommend this cookbook.

Preheat over to 375 °FProteinCookies

3 cups rolled oats
1/2 cup whole wheat flour
1/2 cup soy protein powder isolate (available at capers/whole foods)
1/2 tsp sea salt
1 tsp baking soda
1/2 cup sucanat or brown sugar
1 tsp cinnamon
1 tsp nutmeg
1 tsp ground ginger
1 tsp cumin (be brave–it’s really good!)
1/8 tsp pepper
dash of cayenne
1 banana, mashed
2 tbsp oil
1 cup sour milk or soymilk (add 1 tsp vinegar to make milk ‘sour’)

3/4 cup of raisins (the healthier option)
and/or
3/4 cup chocolate chips (the decadent option)

Mix dry ingredients together in large mixing bowl. Mix wet ingredients in small bowl. Add wet mixture to dry mixture until just mixed. Add in raisins and/or chocolate chips. Place spoon-sized amounts onto cookie sheet. Bake for 8-10 minutes. Makes about 24 small cookies.
